Set your oven to 300°
Pat dry the roast. Season with salt, pepper, paprika, onion powder, garlic powder.
In a dutch oven, heat a small amount of oil and sear the roast on each side.
Remove the roast and saute onions and carrots in the same dutch oven.
After a few minutes add in chopped potatoes.
Place the roast back into the dutch oven, and add beef broth and a little maple syrup.
Enough to reach halfway up the roast.
Cover with lid and place in oven for around 3 or 4 hours. Check on it if you'd like.
Add other spices or things if you want.
